Chef Selvam Kandasamy

Born in Tamil Nadu, India, Sel spent his free time in his grandmother’s kitchen, learning how to make curd from buffalo milk and how to blend the aromatic spices that would later become part of his signature style.

A big part of Sel’s dream to open his own restaurant was to utilise the unique tropical produce of the Territory that was so well-suited to his own brand of his native cuisine, and to provide a more environmentally sustainable dining experience.

Local Produce

Sourcing local produce from Darwin’s markets and Top End growers means fresher, healthier, tastier food that delivers a real sense of place and season, but also helps us reduce food kms and support local food systems towards future food security.

You’ll find 100% NT seafood on our menus, including award-winning sustainably-farmed saltwater barramundi from Humpty Doo Barramundi.

"Darwin is blessed with stellar Indian restaurants, but Saffrron is the most appealing. Diners gather at this suburban eatery for zestful, artful spins on staples including lamb korma, chicken tikka and eggplant masala. The city’s best barramundi dish may well be their Chennai curry, which immerses the omnipresent fish in an aromatic broth of tomato, coconut milk, chilli, tamarind and fenugreek seeds. Chef Selvam Kandasamy is dedicated to using only local seafood, fresh market produce and biodegradable bamboo tableware. He is also an accomplished colourist – his dishes appear as vividly enticing as they taste. Saffrron Express is their takeaway outlet in Alawa.” - George Epaminondas, delicious
